It's Cold Outside

Hi Everyone,

Yes it is cold outside here in Vandergrift PA.  But that is ok, it is warm inside and that is just where I am inside cozy and warm.

Not much happening today.  Did some cleaning and put some homemade spaghetti sauce out to thaw for supper.  We will be having spaghetti with meat sauce and mixed veggies.  I may slice up some more of the Easter ham also.  We have really been enjoying the ham.  When I baked it on Sunday I made a brine of brown sugar, water, and pineapple juice.  I placed slices of pineapple on the ham and held them in place with whole cloves.  The cloves helped flavor the brine, it was delicious.  Monday and Tuesday I fried some of the ham  in the brine which thickened, Jim loved it.  The potato salad is gone and so are the pickled eggs.  I didn't cook as much this year as I normally do.

Well Saturday I am going to my crazy for cupcakes class.  In the class I will learn how to decorate cupcakes.  I am really looking forward to it.  lately I have been on a real cupcake craze.  I like trying different flavors.  Tomorrow I will be baking cupcakes for Saturday.  I am making pina coloda cupcakes.  Maybe I will add some crushed pineapple in the batter.  Pineapple is one of my favorite fruits.  Back in the late 70's I lived in Hawaii while serving in the Air Force, so I ate a lot of pineapple and never grew tired of it.

Waking to the Birds

Hi Everyone,

It's Monday and the birds woke me this morning.  I love it.  I love to hear the birds singing in the morning. That is what I love about spring, because in the morning I wake to the singing of birds.  When summer comes the windows are closed and the AC is on and nature is shut outside.  Also this morning and even now the sky is blue, the sun is shining and it is absolutely beautiful out.  It is suppose to hit 72 degrees today, nice.
Next month Jim and I will be buying plants for the garden and also flowers to plant.  Some of our bulbs are blooming and looking good.

Well today I put all of the Easter decorations away and cleaned up the kitchen.  I am also doing the laundry. Jim is outside working in the yard.  He loves it.  Our canopy is up so we will be sitting outside a lot now.  We love this time of year.

Happy Easter




This is me and my family, Easter 2014.





Hi Everyone,

Happy Easter (Resurrection Sunday) to all.  I hope everyone has had a super day celebrating the resurrection of the Lord Jesus Christ.

We started our day at church celebrating this victorious holiday with an Easter Cantata.  Our choir and orchestra were absolutely wonderful and the message was inspiring as always.

This afternoon Jimmy, Brittany and our precious little Dulcie came over for dinner and spend the afternoon with us.  It was great, the only thing missing was having our wonderful and her family here with us.

Beautiful Saturday.

Hi Everyone,

It is such a beautiful Saturday here in Vandergrift, PA.  Jim is finishing the canopy on our patio in the backyard.  We love having a canopy, we call it our summer room.  We spend a lot of time out there and eat most meals out there as well.

Well the potato salad is done.  The pickled beets and eggs have been doing their thing in the frig since Wednesday, (we like them to really be purple).  Tomorrow morning I will put the ham in the oven before we go to church for Resurrection Sunday service.  Jimmy, Brittany and Dulcie will be over after church to eat and spend some time with us for this special holiday.

Today Jim bought me a Tulip plant for Easter.  It is beautiful.


I love yellow tulips.

Good Friday

Hi Everyone,

Happy Good Friday to everyone.  It is hard to believe in just a couple of days it is Easter.  I am looking forward to celebrating the resurrection of my Savior, the Lord Jesus Christ.

Spring is in the air here in Vandergrift, PA.  It is beautifully sunny out, not to hot and when I awoke this morning the birds were singing and making melody in the air.  That is one of the things I look forward to hearing in the spring.

Today I cleaned upstairs and then I did some mending.  A couple of my spring/summer skirts needed repaired and washed and they are now in the dryer.  Lately I have been doing a lot of embroidery, I am making special pillowcases for my granddaughters for Christmas.  Yes, I know that is months away but there is a lot of detail so I thought I would get started early, that way I am not rushing towards the end.  I am also making pillowcases for our churches knitting ministry.  It is not all knitting, there is also crocheting and now embroidery.  We try to provide a baby blanket for each baby born in our church, we make lap blankets for shut-ins and others in need and now the pillow cases for the newlyweds.  It is just a special ministry to let our fellow worshipers know we care about them.

The Birds are Singing

Hi Everyone,

One thing I like about spring is waking up in the morning to hear the birds singing.  What a wonderful sound that is to wake up to.  I love spring it is one of my favorite seasons of the year.  I am partial to pastel colors and spring is that time of year when those color really stand out.

Easter is this coming Sunday and I am looking forward to celebrating the resurrection of my Savior Jesus Christ.  This is my granddaughter Dulcie's first Easter and I am also looking forward to seeing her in her new Easter dress.  She is so beautiful.  Tiffany will send us pictures via facebook of our other granddaughters Kristy and Abby in their Easter dresses too.

Busy Spring Days

Hi Everyone,

Spring is here and things have been a little busy.  I hope all of you are having a great spring.  It is to be about 81 degrees out today here in Vandergrift, PA.  It is so pleasant out.  Really enjoying the weather.

Last Thursday I made 4 meatloaves, almost 4 dozen meatballs and 4 medium size containers of spaghetti sauce.  I put everything in the freezer for meals.  Then on Friday, Jimmy, Brittany and our precious little Dulcie came over for supper and I made a large dish of salmon stuffed manicotti, an extra large dish of salmon stuffed lasagna.  We also had salad and orange cake with chocolate frosting.  I made extra of the pasta dishes so that I could freeze some for other meals.  I love to have make ahead meals for those days when I am busy, just pop one of them in the oven, add a side dish or two and you have a meal in a short time.  I will post the recipe for the salmon stuffed pasta dishes on my kitchen blog.
